Friuli-Venezia Giulia is a region created a table in the years following the Second World War. On 15 September 1947 was established the TLT (Free Territory of Trieste), divided into two zones. The toponymy, Venetian-type (field, square, street), recalls the defensive structures in the missing part: Porta Grande, Little Door, Porta Nova, Palace, the Tower. On the central area of the Patriarchs rises majestically in the Ravenna style Duomo (Basilica di S. Eufemia).

Risotto with fish, tuna noodles, dumplings of bread with ham, bigoli with anchovies, "cialzons" (kind of ravioli) are the most typical first course, while half are equally divided between meat and fish.
The desserts are so many and different from the "gubana" to "pliers."
